Jaime’s is a genuine shack — food-truck roots, established 2021 — parked under the Theo Baars Bridge on the Florida end of Perdido Key Drive, with waterfront views that fancier places pay millions for. In four years it’s gone from new-kid food truck to a 4.8-star fixture with a nod in Southern Living’s 2025 list of top things to do in Perdido Key, which is a strange and wonderful trajectory for a place this small.
What to order
The lobster roll is the headline and the reason for the line. The grouper sandwich is the local’s alternate — fresh Gulf grouper, no fuss. If you’re feeling regional, the alligator and jalapeño bites exist, and the coconut shrimp holds its own. It’s baskets, tacos, and sandwiches; nothing arrives on a white tablecloth.
The vibe
Order at the window, eat by the water, watch the boats run the bridge channel. This is the kind of spot the Key used to have more of before the condos — casual on purpose, seafood first.

It’s a shack, so weather and season affect hours — check before you make the drive. They also partner with local fishing charters, which tells you something about where the fish comes from.
